You can find these horses all over the map and stable them for later use. Hell, you can even mount a giant horse if you’d like. Is it Possible to Register Undead Horses in Tears of the Kingdom (TotK)?
Sadly, it’s not possible to stable or register your undead horses in Tears of the Kingdom. These zombie-like steeds can be ridden around and used for quick transport but can’t be put in a stable.

You can find plenty of undead horses in Sanindin Park Ruins during the night and all over the Depths (if you decide to explore them in detail). The ones that exist on the surface will disappear at 5 AM, while undead horses in Depths will continue to be playable at all hours.
If you wish to keep a horse forever, you would have to do that with the “living” ones that you can stable in these locations.
